My favorite pairing for this jam is Shakerag Blue made by Sequatchie Cove Creamery in Tennessee. This cheese is wrapped in grape leaves macerated in Bourbon. The Bosc pear cuts through the acidity of the cheese like a butter knife and the vanilla and nutmeg offer nuances of vibrant spice to the palate.
